The Story Behind Raspberry Panna Cotta

Panna Cotta, meaning “cooked cream” in Italian, is a luxurious yet simple dessert. Its velvety smooth texture and lightness make it a go-to for elegant meals, and the Raspberry Panna Cotta is a fresh twist. The tartness of the raspberry compote balances perfectly with the rich cream base, offering a light yet indulgent finale to any dinner.

About The Recipe

This Raspberry Panna Cotta is made with heavy cream, milk, and gelatin, which create the smooth, silky texture. Vanilla bean paste is added to infuse a deep, aromatic sweetness, while the raspberry compote provides a fresh, fruity contrast. For the Thomy Twist, we add a hint of lemon zest to the panna cotta for a subtle brightness that complements the raspberries without overpowering the dish.

Ingredients

  • 1 cup heavy cream
  • 1/2 cup milk
  • 1/4 cup sugar
  • 1 tsp vanilla bean paste
  • 2 tsp gelatin powder
  • 1/4 cup cold water
  • 1 cup raspberries
  • 2 tbsp sugar (for compote)
  • Fresh mint (for garnish)
  • Thomy Twist: 1 tsp lemon zest (to infuse in the cream)

Instructions

  1. In a small bowl, sprinkle the gelatin powder over cold water and let it bloom for 5 minutes.
  2. In a saucepan, combine the heavy cream, milk, and sugar. Heat gently over medium heat, stirring occasionally, until it begins to simmer.
  3. Add the bloomed gelatin to the cream mixture, stirring until fully dissolved.
  4. Stir in the vanilla bean paste and lemon zest. Remove from heat and pour the mixture into individual serving glasses. Let it cool slightly, then refrigerate for at least 4 hours or overnight until set.
  5. While the panna cotta sets, make the raspberry compote: In a saucepan, heat the raspberries and sugar over medium heat until the raspberries break down and the mixture thickens slightly. Remove from heat and let it cool.
  6. Once the panna cotta has set, top each glass with a spoonful of raspberry compote.
  7. Garnish with fresh mint to add a touch of freshness and color.

Thomy Twist

A touch of lemon zest in the cream mixture adds a subtle brightness, enhancing the flavor of the raspberry compote and creating a well-rounded, refreshing dessert.
